Freezer meals

It is supposed to be 100 degrees F today, so I am hibernating in the house. lol. No cooking going to happen, but there are a couple of recipes that look really good and then a whole page dedicated to meals you can just throw in the freezer for the future. Absolutely awesome.

This one is marinades for chicken: throw the frozen chicken pieces in the marinade and freeze, and then they're automatically marinating when they're defrosting! Brilliant. lol.

Two slow cooker recipes and then one fantastic sounding wrap from the leftovers. Mmm. On a side note, though, if you're not going to look up the recipes right away, at least write down the name. Some of Aaron McCargo's shows from last month looked fabulous, but they're not in the top 100 and I couldn't remember what it was enough to search for it. Was planning on checking out the episode descriptions and finding them that way, but it appears they no longer list them that way? I couldn't find it, anyway. *sigh* Read more... )

Steamed apple chicken and roast vegetables
Serves 4

4 skinless organic chicken breasts
2 tsp avocado or olive oil
3cm piece of fresh root ginger, peeled and finely chopped
2 garlic cloves, peeled and chopped
2 small onions, peeled and finely diced
2 carrots, trimmed, peeled and finely diced
1 small red pepper, deseeded and finely diced
1 head broccoli, cut into small florets
20 baby corn, trimmed
250ml freshly pressed apple juice
100g raw beansprouts

Preheat oven to 200°C/Gas 6.

Take a large piece of aluminium foil and place the chicken breasts in the centre. Drizzle over the oil and add the ginger, garlic and vegetables. Draw up the sides of the foil and pour in the apple juice.

Scrunch up the foil to seal everything in and place in the oven for 10-15 minutes. Remove from the oven and allow to rest for 5 minutes.

Transfer the foil parcels to four serving plates, open the parcels slightly and serve immediately.

I'm fond of boxed food, so don't hate me for this one. ;D I haven't tried it but it sounds good. And at least it's healthier comfort food (adding the veggies).
