Two slow cooker recipes and then one fantastic sounding wrap from the leftovers. Mmm. On a side note, though, if you're not going to look up the recipes right away, at least write down the name. Some of Aaron McCargo's shows from last month looked fabulous, but they're not in the top 100 and I couldn't remember what it was enough to search for it. Was planning on checking out the episode descriptions and finding them that way, but it appears they no longer list them that way? I couldn't find it, anyway. *sigh*

Directions
1 onion, chopped
4 small red potatoes, quartered
2 carrots, peeled and chopped
1 turnip, peeled and chopped
1 rutabaga, peeled and chopped
1 (3-pound) chuck roast
Salt and ground black pepper
3 tablespoons all-purpose flour
1 (15-ounce) can tomato sauce
2/3 cup brown sugar
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon mustard powder
1 teaspoon garlic powder
Arrange onion, potatoes, carrots, turnip, and rutabaga in bottom of slow cooker. Season beef all over with salt and black pepper. Rub flour all over beef. Place roast on top of vegetables in slow cooker.
Whisk together tomato sauce, brown sugar, chili powder, cumin, mustard powder, and garlic powder. Pour mixture over beef. Cover and cook on LOW for 12 hours or on HIGH for 8 hours.
Serve 1/3 of beef and all of the vegetables with this meal. Shred and refrigerate remaining beef until ready to use.

1 tablespoon sesame oil
1 cup shredded cabbage
1 cup shredded carrots
2 cups shredded leftover cooked beef
1/4 cup hoisin sauce
1 tablespoon reduced-sodium soy sauce
1 1/4 cups water
1 cup uncooked couscous
Salt and pepper
1 teaspoon curry powder
8 Bibb or romaine lettuce leaves
In a large skillet over medium-high heat, add the sesame oil and heat. Add the cabbage and carrots and saute for 2 minutes. Add the beef and cook, stirring, until the beef is heated and the cabbage begins to wilt, about 2 minutes. Add the hoisin sauce and soy sauce and cook 5 minutes, until mixture heats through and cabbage wilts, stirring frequently.
Meanwhile, bring the water to a boil. Place the couscous in a heatproof bowl and sprinkle with salt, pepper, and curry powder. Pour the boiling water over the couscous and cover for 5 minutes. Fluff with a fork.
Spoon some of the beef into the center of each lettuce leaf and roll up. Serve with the couscous.

* 1 (28-ounce) can diced tomatoes
* 1 medium onion, chopped
* 1 green bell pepper, seeded and chopped
* 1 stalk celery, chopped
* 1 cup reduced-sodium chicken broth
* 2 teaspoons dried oregano
* 2 teaspoons Cajun or Creole seasoning
* 1 teaspoon hot sauce
* 2 bay leaves
* 1/2 teaspoon dried thyme
* 1 pound frozen peeled and cooked shrimp, thawed
* 2 cups cooked rice
Directions
In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery, and chicken broth. Stir in oregano, Cajun seasoning, hot sauce, bay leaves, and thyme.
Cover, and cook on LOW for 7 hours or on HIGH for 3 hours. Stir in the thawed shrimp, cover and cook until the shrimp is heated through, about 5 minutes. Discard bay leaves and spoon mixture over cooked rice.
