LJ Spotlight is interesting sometimes. Currently they are featuring [livejournal.com profile] couch_to_5k, which I ignored yesterday. lol. Checked it out today, though, and while a 5K is not on my goal list currently they do have a lot of good info in there. Especially tips on how to avoid shin splints and side stitches, which are the main reasons I don't even try to run anymore. So maybe I'll try it again!

Have been walking 3-4 times a week lately, more when it works out. It's not the most dramatic type of workout, but it feels good to be out of the house and being physical. Nate misses the hiking, but that isn't as convenient for a lot of reasons. Hunting season and the rain will start soon enough and make it impossible to go hiking soon anyway.

Sooooo glad tomorrow is Friday. Why is it the short weeks are so intense? All in all today was good. Just mentally exhausting. lol.

We got our latest upgrade of our software - 2nd beta version. It's going to be fabulous once we get used to the new layout and look, and know where the heck everything is located now! But today it was just insane working out the little bugs and stuff. Took me an hour to get going this morning simply because part of it had upgraded and yet the main new part looked exactly like the old part! Turns out it was just a resolution screen size thing, but that was really weird. Anyway, some of the changes are totally awesome and will make things a lot easier down the road. Yay!

Last night we went to a hip-hop dance class at the fitness center. It was actually quite a bit of fun!! I loved the warm up moves and music - though I thought if that was the warm up the work out itself would be killer! It was actually pretty nice, but trying to keep track of dance moves even when he teaches them really well and in smaller doses just isn't something I want to focus on after work at this point. I'm going to ask him if he'd mind if I just did the warm up part with the class, and then go use the ellipsis or treadmill while the rest of the family is in the dance class. It's less taxing on the brain and more taxing on the fat. lol.

I'm so very glad the Colts won last night! It was looking like I was only going to get two teams right for the week, but thankfully they won and I actually ended up with six right. Whooo! Hahahah! Crazy week.

Steamed apple chicken and roast vegetables
Ingredients
Serves 4


4 skinless organic chicken breasts
2 tsp avocado or olive oil
3cm piece of fresh root ginger, peeled and finely chopped
2 garlic cloves, peeled and chopped
2 small onions, peeled and finely diced
2 carrots, trimmed, peeled and finely diced
1 small red pepper, deseeded and finely diced
1 head broccoli, cut into small florets
20 baby corn, trimmed
250ml freshly pressed apple juice
100g raw beansprouts
Method

Preheat oven to 200°C/Gas 6.

Take a large piece of aluminium foil and place the chicken breasts in the centre. Drizzle over the oil and add the ginger, garlic and vegetables. Draw up the sides of the foil and pour in the apple juice.

Scrunch up the foil to seal everything in and place in the oven for 10-15 minutes. Remove from the oven and allow to rest for 5 minutes.

Transfer the foil parcels to four serving plates, open the parcels slightly and serve immediately.

Finally sitting down and actually listening to Corinne Bailey Rae's album. OMG--gorgeous!! Her voice is just beautiful, and the music is lovely. A bit mellow and jazzy, but complements her very well. Mmm.

Today has been a pretty good day. Went walking with Nate this morning even though it was freezing! Sheesh, isn't today the official first day of spring? Oh well, we currently have sunshine and a bit of warmth so that's good. :D Then caught up on the CSI eps for the week, and headed out for errands. One of my packages arrived this morning - Propaganda has the yummiest soaps! Mt Rainier is absolutely delicious. I've enjoyed my villainess soaps, but I think I may just have to switch if they continue to be as strong smelling and foamy as this one is right now. Weighed in and actually lost .5 pound, whew! Then ran over to the mall to see if Bath & Body Works had any new products in their black cherry vanilla scent - of course not. But I did get the mint shampoo to go with my mint conditioner, and got their gradual tan stuff since it was on sale. Hope it works, because it smells great! Got the tangerine and verbena options, and then the Pineapple Mango room scent (it was an impulse buy because I asked her about the candles which were sold out, but this was only $2 more and is awesome!). Then I came straight home so I wouldn't find anything else more I had to have. LOL.

As expected, I didn't work on the closet or garage, but I did rearrange and dust both book/model horse cases. I'm not sure that I gained any actual space, but changing things around was fun anyway. I'm tempted to start on the closet later, but that may be a weekend thing.
